Happy Sunday, meal preppers! This week’s meal plan includes a couple of recipes perfect for spring (and Easter), plus a couple of my go-to meals. Oh, and can you spot the out of place item in the photo above? My perfectionist brain is so annoyed that I missed it when taking pictures of this meal prep spread. The Meal Plan
You may notice that my weekly meal plans only account for 6 out of the 7 days of the week. Don’t worry, that’s intentional and there are a few reasons for it. First, food freshness is quickly fading by day 6 and I don’t like to push beyond that limit. Second, I like to leave a little room for spontaneity, so I give myself some space in my meal plan for one or two meals of takeout or dining out (usually on the weekend). You can adjust this meal plan to meet your needs, but I always share what I’m actually prepping and eating so you can decide if it will work for you too.

Snack Ideas
My weekly meal plans don’t include snacks, but don’t let that fool you – I eat plenty of snacks to round out my nutritional and hunger needs! Here are some ideas to help you meet yours:
- Cottage cheese with jam

Carrot Cake Baked Oatmeal
I know carrot cake can be a bit controversial and a lot of people love to hate on it, but I’m definitely a carrot cake lover. Give me plenty of spices and raisins, but go easy on the nuts, please!

Chicken Tzatziki Bowls
Aside from the star of the show (tzatziki, duh), chicken tenderloins are marinated in a yogurt, olive oil, and lemon concoction, then grilled to juicy perfection. It’s all paired up with cucumbers, tomatoes, lettuce, feta cheese, and served on top of a bed of rice.

Tzatziki packs a ton of refreshing flavor thanks to shredded cucumber, fresh dill, and tangy Greek yogurt. It’s often served as a cold appetizer or as a condiment or sauce with a meal like gyros.

This low carb viral Egg Roll in a Bowl recipe sensation packs a huge protein and flavor punch. The best part? It couldn’t be easier to make.

Turkey Taco Salad
This hearty taco salad is made with high protein ground turkey that’s smothered in a yummy skillet sauce, then paired with corn, black beans, tomatoes, and tortilla strips. Finally, it’s topped with Avocado Ranch Dressing. This is my go-to meal prep salad!
