
Skip the takeout and make one of Chipotle’s most popular orders at home instead with this healthy and totally crave-worthy Copycat Chipotle Chicken Burrito Bowl! Chipotle has been my go-to fast food restaurant for years because I love being able to get a hearty, high-protein meal with all the flavors I love. Well, I’m bringing those flavors to my home kitchen with this perfectly meal preppable lunch or dinner, complete with toppings like guacamole and roasted corn salsa.

Ingredients and Substitutions
Here’s what you’ll need to recreate this Copycat Chipotle Chicken Burrito Bowl at home:
- Chicken – I used chicken thighs for maximum flavor and juiciness, but chicken breasts would work well too.
- Rice – I included MFP barcodes for making this with or without rice in case you want to use a lower carb substitute or skip it altogether.
- Black beans – Maybe a controversial move to some of you, but I opted for the canned black beans that come with a chili sauce. You can always make your own or go for plain black beans if you prefer.
- Corn salsa – This is one of my non-negotiable toppings when I’m building my own burrito bowl at Chipotle! I recreated the recipe at home to enjoy.
- Guacamole – Another must have topping that I’ll always pay extra for! But no need when you can make it at home.
- Lettuce – The pre-bagged shredded iceberg lettuce is perfect here, though you can always shred your own or skip it.
- Cheese – I actually tend to skip this topping when I’m at Chipotle but decided to splurge here. They use Monterey Jack cheese in the restaurant, but use whatever kind you like, or skip it if you prefer.


You can add any number of other toppings that you like! Here are some ideas for inspiration:
- Sautéed onions and bell peppers (fajita veggies)
- Pinto beans
- Pico de gallo
- Shredded cabbage
- Sour cream
- Chipotle mayo
- Literally any salsas or hot sauces you like!

Meal Prep this Recipe
This recipe does really well in meal prep! I recommend using a 2 compartment container like this. In the larger section, add the rice on the bottom, then top it with chopped chicken and black beans. In the smaller section, use a silicone bento cup like this to put the shredded lettuce in – this will allow you to easily remove the lettuce before microwaving. For the guac and corn salsa, I used mini Mason jars like these, although these plastic ones would work great too. Add hot sauces or other salsas with small dressing containers like this.

Copycat Chipotle Chicken Burrito Bowl
Ingredients
Chicken and Marinade
- 1 3/4 lbs boneless, skinless chicken thighs, excess fat trimmed
- 1/3 cup red onion, chopped
- 3 cloves garlic
- 2 tbsp vegetable oil, plus more for grilling
- 2 tbsp lime juice
- 1 chipotle in adobo sauce
- 1 tbsp sauce from chipotles in adobo
- 1 tsp each: smoked paprika, Mexican oregano, cumin
- 3/4 tsp sea salt
Bowl Ingredients
- 4 cups shredded lettuce, (200 grams)
- 3 cups Copycat Chipotle Corn Salsa, (24 fl oz)
- 1 1/2 cups Copycat Chipotle Guacamole, (12 fl oz)
- 1 1/4 cups dry jasmine rice, cooked according to package directions, (231 grams)
- 1 15.5 oz can Bush's Best Chili Beans Black Beans with Mild Chili Sauce
- 1 cup shredded Monterey Jack cheese, (112 grams)
- 1 lime, juiced
- 1/4 cup cilantro, chopped
Instructions
- Add all Chicken and Marinade ingredients except the chicken thighs to a food processor and pulse until the onion is pureed and the ingredients are well combined. Pour marinade over trimmed chicken thighs, toss to coat evenly, cover, and refrigerate for at least 4 hrs or up to overnight.
- Pre-heat grill to 425°F (though anywhere between 400-450° will work). Once pre-heated, use grill tongs and a bunched up paper towel to brush the grill grates with vegetable oil. Add the marinated chicken thighs to the oiled grill grates and grill for about 6 minutes per side or until cooked through.
- Remove chicken from the grill and rest for at least 5 minutes before chopping into bite sized pieces.
- Toss the cooked rice with lime juice and cilantro, then layer into the bottom of serving bowls. Add black beans, chicken, and remaining toppings before serving.
