This Watermelon Coconut Mojito is the ultimate refreshing cocktail to celebrate, so whip up a few today for poolside or in the backyard. Rather than blending up the watermelon, a good shake helps it break down to release watermelon juice right into your drink and meld flavors with the mint and coconut. Talk about an easy, refreshing summer beverage!

Here’s what you’ll need to recreate these Watermelon Coconut Mojitos at home!
- Watermelon – Watermelon is the star of the show here, so be sure to get a big, juicy seedless watermelon. It’s important that it’s seedless or you’ll be drinking up watermelon seeds through your straw.
- Coconut rum – The first layer of coconut flavor and a bit of sweetness come from the coconut rum. I went with a classic Malibu rum, but whatever coconut rum you prefer will work! The more coconut flavor it has, the better.
- Coconut cream – And here’s the 2nd layer of coconut flavor. As the name suggests, it also brings some creaminess to this drink and because it’s quite sweet, it takes the place of the sugar you find in a classic mojito.
- Lime – A bit of fresh squeezed lime juice is essential in any mojito and helps balance out the sweetness of the other ingredients with bright acidity.
- Mint – If you can find and grow it in your garden, mojito mint is the ideal mint for mojitos. It’s a little milder than spearmint, which is the next best option for mojitos (and the most common one you’ll find in the grocery store).
- Club soda – Although you don’t need much of it, club soda not only brings the fun fizz of a bubbly carbonated drink, but it also stretches the flavors of this cocktail, making it a perfect afternoon sipper.

Best Ice for Mojitos
Having made this recipe with ice cubes, pellet ice, and large chunks of crushed ice, I have to say that I prefer the large crushed ice. Pellet ice melted too quickly and over diluted the drink, whereas the large chunks of ice (with more surface area than your average cube) kept it cold without melting too quickly. Whole cubes were too bulky to allow even distribution of the watermelon and mint in the drink. Start with this size of cubes, then give them a few whacks with an ice mallet to break them into large chunks.

Watermelon Coconut Mojito
Ingredients
- 2 oz coconut rum
- 1 1/2 oz club soda
- 1 oz lime juice
- 1/2 oz coconut cream
- 5 1" cubes watermelon
- 8 mint leaves
Instructions
- Add all ingredients except club soda to a shaker with large chunks of crushed ice. Shake vigorously for 5-10 seconds, then pour into a serving glass (don't strain it).
- Top with more crushed ice and club soda. Stir gently to combine before serving.
