Ingredients
Here’s what you’ll need to recreate this Lavender Simple Syrup recipe:
- Water
- Sugar – You’ll need equal parts water and granulated sugar for this simple syrup (and most others).
- Culinary lavender – You might be able to find this in the spice section of your local store, but this is an ingredient I actually prefer to buy online. I like this brand and you get a lot of lavender. If you want to avoid having to strain out the lavender from the syrup, you could try lavender extract instead.
- Violet food coloring – totally an optional ingredient, but a necessary one if you want to achieve the color I did. I’ve also tried making this syrup with butterfly pea flowers and butterfly pea powder as a natural coloring alternative, but I prefer the food coloring to avoid it turning pink when it comes in contact with an acidic ingredient like lemon juice.

For best results, strain your syrup through a cheesecloth to avoid any floating debris in the final product. Obviously the fine mesh strainer does the heavy lifting, but I preferred the results when I used the strainer with a cheesecloth set into it.
How to
Make It Colorful
As you can see in the photo above, this simple syrup doesn’t naturally have a purple color. After the syrup is strained, I recommend using a bit of violet gel food coloring to nail the color. With gel food coloring you only need a tiny bit – about the size of the lead on a regular sharpened pencil tip – to attain the color you see here. You could use 2-3 drops of liquid food coloring instead, or skip it altogether.

Lavender Simple Syrup
Ingredients
- 1 cup water, (8 fl oz)
- 1 cup granulated sugar, (200 grams)
- 1/4 cup culinary lavender
- Optional: violet gel food coloring or liquid food coloring
Instructions
- Add water and sugar to a saucepan and bring to a boil over medium heat. Stir until sugar is dissolved and remove from heat.
- Add culinary lavender to the syrup and stir to ensure all lavender is in the syrup. Steep for 10 minutes, then strain the lavender out using a fine mesh strainer.
- Optional: For more intense purple color, whisk in a small amount of violet food coloring.
