Kick off summer grill season with these juicy Greek Turkey Burgers! It’s hard to tell from the photos here, but I’ll share a video shortly where you can see just how juicy these turkey burgers are. Don’t sleep on them – they may be the healthy option in the burger world but damn are they delicious too! Greek inspired seasonings and ingredients like cucumber, dill, and feta are all mixed into the burgers and they’re topped with ultra refreshing tzatziki sauce.

Easy tzatziki dip packs a ton of refreshing flavor thanks to shredded cucumber, fresh dill, and tangy Greek yogurt.

Ingredients and Substitutions

Here’s what you’ll need to recreate these Greek Turkey Burgers:

  • Ground turkey – Opt for the slightly higher fat ground turkey to keep the burgers juicy. I went with a 93/7 blend and I wouldn’t recommend anything leaner than a 94/6. Ground chicken will work too!
  • Spinach – I went with a frozen spinach but you could totally use fresh instead, you might just have to fight it a bit to get it to form into patties.
  • Cucumber – The first time I tested this recipe, I skipped the finely grated cucumber. I like the burger better with it because you get a juicier burger. After you grate the cucumber, rest it on a doubled up paper towel and squeeze out any excess moisture before adding to the burger mix.
  • Feta cheese – I tested these with the pre-crumbled, Mediterranean flavored feta from Wegmans and plain brick feta that I crumbled myself. Both are great, but if you want a little bit of meltiness, go for the one you can crumble yourself since the pre-crumbled stuff tends to be dryer.
  • Shallots – I love shallots because they’re a two-for-one flavor bomb – onion and garlic all in one!
  • Dill – I like fresh dill for this, but if you need to use dried dill, you’ll need way less since drying it concentrates the flavor. Go for about 1 tsp for this recipe.
  • Lemon zest – Optional, but I think you can taste it in there!
  • Spices – A blend of oregano, smoked paprika, lemon pepper seasoning, pepper flakes, plus salt and pepper, makes for a great flavor combo.

Greek Turkey Burgers

Ingredients

Turkey Burgers

  • 2 lbs 93/7 ground turkey
  • 1/2 cup frozen spinach, thawed and excess moisture squeezed out, (128 grams frozen weight)
  • 1/2 cup finely grated cucumber, excess moisture squeezed out, (100 grams raw cucumber)
  • 3/4 cup Wegmans Mediterranean Crumbled Feta, (84 grams)
  • 1/4 cup shallot, finely diced, (40 grams)
  • 2 tbsp fresh dill, chopped
  • 1 tsp lemon zest
  • 1 tsp each: salt, oregano
  • 1/2 tsp each: smoked paprika, lemon pepper seasoning
  • 1/4 tsp each: black pepper, red pepper flakes

Toppings

  • 6 Wegmans Brioche Rolls, (444 grams)
  • 1 1/2 cups Easy Tzatziki Dip, (12 fl oz)
  • 12 leaves butter lettuce, washed and trimmed, (100 grams)
  • 1 medium tomato, sliced thinly, (120 grams)
  • 1 mini seedless cucumber, sliced thinly, (50 grams)
  • 1 cup Pickled Red Onions, (150 grams)

Instructions

  • Add all burger ingredients to a bowl and mix with hands just until ingredients are incorporated evenly into the turkey. Form 6 burger patties and place on a parchment lined baking sheet, then refrigerate for 20-30 minutes.
  • Place a cleaned grill topper on top of the grill grates, then pre-heat grill to about 450°F.
  • Once grill is pre-heated, bunch up a paper towel with a pair of grill tongs; dip it in a bowl of vegetable oil (you need the higher smoke point of vegetable oil as opposed to olive oil); and then run it over the hot, clean grates or grill topper to create a nonstick surface. 
  • Once the burger patties have rested in the refrigerator, flip them onto the oiled grill topper. Grill 5 minutes on one side, then flip and grill for an additional 4-5 minutes or until cooked through.
  • Serve with lettuce, tomato, cucumber, pickled red onions, and tzatziki sauce on a toasted brioche bun.
