It’s the final day of Air Fryer Week here at PBF, and I’m rounding things up with a simple, but so-delicious Air Fryer Veggie mix. If you’re picky about veggies, the air fryer is one of the best ways to cook them for crave-worthy vegetables that just about anyone can fall in love with. This is such a great pairing with chicken for an easy meal prep idea – I love to serve it with a little bit of pesto to make it even better.
Ingredients and Substitutions
Here’s what you need to make this Air Fryer Veggies recipe at home!
- Broccoli – Essentially the “backbone” of this veggie mix, I love the way broccoli gets brown and roasty in the air fryer! Some spots get a little crispy and those are my favorite parts. You could get more even browning by air frying the broccoli by itself, away from the veggies that have more moisture, but I love the convenience of air frying it all in one basket. The broccoli will burn first out of all the veggies here, so keep an eye on it in the last couple minutes of cooking.
- Zucchini – Other squash like summer squash or even butternut squash (cut into very small chunks, <1/2″) would work here if zucchini isn’t readily available.
- Bell pepper – Skip the more bitter green bell peppers and opt instead for red, orange, or yellow. They’re sweeter and tastier in this mix! Those sweet mini peppers would also work well here, just halve them or slice them into rings.
- Red onion – For a pop of color and bright flavor! You can also use regular or sweet onion, or skip it altogether.
- Olive oil – Toss the veggies in olive oil or another oil you like to evenly coat the veggies and encourage browning.
- Seasonings – I used a mixture of lemon pepper seasoning, chili powder, salt, and pepper, but you can use whatever combo you like!

Air Fryer Veggies
Ingredients
- 4 cups broccoli florets, (365 g)
- 1 medium zuccini, sliced, (196 g)
- 1 medium orange bell pepper, (136 g)
- 1/2 medium red onion, chopped into 1" chunks, (100 g)
- 1 tbsp olive oil, (0.5 fl oz)
- 3/4 tsp Oh My Spice! Lemon Pepper Seasoning
- 1/4 tsp chili powder
- salt and pepper to taste
Instructions
- Pre-heat air fryer to 370°. In a large bowl, toss all ingredients until evenly coated with oil.
- Spread the veggies evenly in the air fryer basket. For the crispiest results, do this in 2 batches (or more for a smaller air fryer). Air fry for 8 minutes, shaking the basket halfway through.
