Peaches are back! Every time I go to the grocery store I check to see if there are peaches…and there haven’t been any for a while now. At least not ones that I would want to eat. But the other day they were finally back 🙂 Big juicy ones too, not the little ones that are hard as a rock. So obviously I needed to use them in a recipe!
I love whipping up fruit salsas to go with fish. They’re really fast and easy to make and you can pretty much put whatever you want in them and they taste great. I paired this one with some red snapper and green beans when I served it. It’s sweet, but not too sweet and it complements the fish nicely. I tried it with some Mahi Mahi too and that was just as good.
This fruit combo kind of reminds me of summer. But it was 80 degrees here yesterday, soooo I guess I don’t need too much reminding. It’s still a refreshing change of pace since it’s winter…so if you’re stuck in a snow-pocalypse, just channel some summer into your day with fruit salsa!
Non-food discussion: Did anybody watch the Grammy’s the other night? I saw most of it and the performances were awesome! My favorites – Beyonce and Jay-Z, Kendrick Lamar and Imagine Dragons, and Sara Bareilles and Carole King. Maybe I just bought 3 Sara Bareilles albums. She’s amazing! And hilarious in real life…if you don’t believe me, watch this! Even if you do believe me, you should watch it. This one too. She’s great.

Ingredients:
- 1 medium peach, pitted and diced
- 1 cup diced strawberries
- 2 small Roma tomatoes, diced
- 1/4 cup diced red onion
- 2 tbsp fresh cilantro, chopped
- 1 jalapeño pepper, diced
- Juice of 1 lime
- 1 tbsp honey
- 1 tsp apple cider vinegar
- Dash of salt
