Happy #CocktailFriday! This week I’m whipping up these yummy, summery, beach-y Pineapple Coconut Rum Coolers. They remind me a little bit of a painkiller cocktail, but I skipped the OJ and nutmeg and used light coconut milk instead of coconut cream. Grab a couple of these and some friends, then go park yourself in a beach chair or tiki hut to drink them 😉

Pineapple Coconut Rum Cooler
Ingredients
- 6 oz pineapple juice
- 4 oz light coconut milk
- 4 oz coconut rum
Instructions
- Combine all ingredients and mix well. Pour over ice and garnish with maraschino cherries, if desired.
