We climbed our way to the middle of the week guys. It’s all downhill to the weekend from here, right? St. Patrick’s Day is only a week away, so you better believe I’m busting out some green food, like these yummy Matcha Coconut Energy Bites! Every time I make something with matcha, I’m always slightly surprised at just how much I love it. I know I love green tea but I think I have this expectation that matcha has an excessively earthy flavor…but it doesn’t! It a rich green tea flavor with this amazing lingering sweetness. Especially when it’s mixed in with the gentle flavors of honey and coconut in these energy bites 😉

I tried making these bites two ways – one blended up in the food processor and one with the oats left whole. I highly recommend using the food processor because that method makes it a lot easier to form the balls, plus I just liked the texture better! I also highly recommend a little drizzle of white chocolate over top. And do your best to not get addicted to these bad boys like I did…

Fun fact: the piece of wood that I photographed these on is from an old treehouse my dad and I built in the woods when I was a kid. It’s all covered in moss now and makes for a fun backdrop for these green balls! Thanks Dad for sending it to me 🙂

Matcha Coconut Energy Balls

Servings: 8 balls

Ingredients

  • 3/4 cup rolled oats, (60 grams)
  • 1/2 cup unsweetened shredded coconut, (40 grams)
  • 1 scoop PEScience Select Vegan Vanilla Indulgence Protein Powder, (28 grams)
  • 1 tbsp matcha powder, (6 grams)
  • 1 tbsp chia seeds, (12 grams)
  • 1/3 cup unsweetened vanilla almond milk, (2.67 oz)
  • 2 tbsp honey, (42 grams)
  • 1 tbsp coconut oil, melted, (13 grams)

Optional Toppings (Not Included in Nutriton Info)

  • white chocolate, melted
  • additional shredded coconut

Instructions

  • Add oats, coconut, protein powder, and chia seeds to a food processor. Pulse until only small bits remain (doesn't need to be totally powdered).
  • Add remaining ingredients and pulse until combined. Transfer to a bowl and use your hands or a cookie scoop to scoop out even portions, then squeeze them in your hands and roll into 1" balls.
  • If desired, drizzle melted white chocolate over top or roll in additional coconut flakes.
  • Place in a resealable container to set up for at least 1 hour before serving.

    Awesome post! These Matcha Coconut Energy Bites certainly look so yummy and healthy. They are so festive for St. Patrick’s Day. I can see where they would be addicting to me. I enjoy coconut, and need to be healthy. These are a perfect choice!! The photography is spectacular.
