It’s new recipe…Tuesday! Because you know, Taco Tuesday and all. But hey, these Southwest Turkey Lettuce Wraps sort of count, right? I know, I know. They don’t really count as tacos, but they’re still delicious and fun to eat with your hands 😉 I’ve been meal prepping some version of this recipe for years and I always do it buffet style so I can choose my toppings based on what I’m feeling like eating in the moment. You could really go crazy with the toppings here (hello, hot sauces!), but I like to keep it relatively simple so it’s quick to assemble. I usually serve them with a salsa of some sort and a Greek yogurt/sriracha mixture for a something creamy and spicy.
As for the lettuce leaves, I prefer butter lettuce for the flavor/texture, but it can be a little too floppy/tender for some people. If you think you’re one of those people, go for the iceberg lettuce. I won’t judge.
I used ground turkey here, but you can really use whatever meat you want. Ground beef? Perfect. Slow cooker chicken like I made for my favorite sheet pan nachos? Even better! And hey – if you want to really turn it into Taco Tuesday, throw in some real tortillas. It’s a choose your own adventure kind of situation, but one that can easily be meal prepped buffet style! Southwest Turkey Lettuce Wraps
Ingredients
- 1 lb 93/7% lean ground turkey
- 1/2 cup Frontera New Mexico Taco Skillet Sauce, (120 grams)
- 10-12 leaves butter lettuce
- 1 cup roma tomatoes, diced, (120 grams)
- 1 cup low sodium black beans, drained and rinsed, (260 grams)
- 1 cup frozen corn kernels, thawed, (120 grams)
- 1/2 tbsp olive oil, (0.5 fl oz)
- 1 tsp Oh My Spice! Spicy Fajita Seasoning
Recommended Toppings (Not Included in Nutrition Info)
- salsa (I like avocado salsa)
- guacamole
- plain Greek yogurt or sour cream
- sriracha sauce
Instructions
- Heat a large skillet over medium-high heat, then add about 1 tsp of olive oil. Add ground turkey, season with Oh My Spice! Seasoning, and break apart with a wooden spatula until nearly cooked through, then add skillet sauce and finish cooking.
- Serve over veggies, then add desired toppings before serving.
