This smoothie bowl looks like it’s ready to start singing Let It Go, doesn’t it?! Aside from being gorgeous, this Blue Collagen Smoothie Bowl is dairy-free and has 12 grams of protein per serving. It gets that beautiful blue color not from food coloring but from butterfly pea powder! If you’ve never worked with it before, butterfly pea flowers (and powder) is this natural blue flower from Thailand that even changes color when it meets something acidic like citrus juice. I love playing with it in drinks, and now I know I love playing with it in smoothies too!
What you might not guess by looking at it is that this smoothie bowl is actually full of tropical flavors like coconut, mango, and banana. Yum!

Blue Smoothie Bowl
Ingredients
- 1 1/2 cups mango, chopped and frozen, (250 grams)
- 1 cup banana, chopped and frozen, (150 grams)
- 3/4 cup Thai Kitchen Lite Coconut Milk, divided, (6 fl oz)
- 2 scoops collagen, (22 grams)
- 1/2 tbsp butterfly pea powder
Instructions
- Freeze half of the coconut milk into ice cubes.
- Add all ingredients to a blender and blend until smooth. Add a little more coconut milk if needed to blend completely.
