How about a light, fluffy and moist cake that’s only 100 calories? Yep, it’s true. And it’s delicious. It tastes like the cake version of a cross between a snickerdoodle cookie and a cinnamon roll, but I like the way that snickerdoodle sounds. I needed to get some extra protein in today to fit my macros, so here it is!
I realized today that I totally forgot to pick up more Greek yogurt when I got groceries yesterday, but I did have some light vanilla Activia. Why not? It’s not as thick and rich as Greek yogurt but it was still yummy! Plus it got super melty when I put it on top of the hot mug cake.
Those are gold cupcake sprinkles on top, I thought they were perfect on top of here. Subtract the sprinkles and add some fruit on the side and you’ve got breakfast 🙂

Ingredients:
- 2 tbsp quick oats
- 1 tsp vanilla protein powder
- 1 packet Splenda
- 1/2 tsp cinnamon
- 1/4 tsp baking powder
- 1/2 tsp vanilla extract
- 2 tbsp + 1 tsp unsweetened applesauce
- Few drops McCormick Vanilla Butter and Nut Flavor
- 1 egg white
Frosting:
- 2 tbsp light vanilla Activia
- Optional: Cinnamon and gold cupcake sprinkles
