Guys, July 4th is right around the corner. In my books, that calls for America themed gelatin shots. Yes, you might call them Jell-O shots (I do too), but these beautiful layers don’t use any of the boxed gelatin that’s full of artificial colors and flavors. Instead, I used juice and berries to get the ‘Merica theme going on here. And they’re delicious!
It might look like a complicated thing to build a layered shot (especially without the help of your childhood gelatin), but it’s seriously easy. You just have to give it a little extra time to set up. But you could be doing any number of things while each layer sets. For example, you could do laundry and watch your favorite show. You could go to the gym and get your swole on. You could taste test the vodka and pass out on the couch. So many options!
Recipe
Red, White, and Blueberry Jello Shots
Ingredients
Red Layer
- 1 cup Simply Mixed Berry Juice Drink
- 1 cup Cheribundi Tart Cherry Juice Light
- 1/2 cup vodka
- 2 1/2 tbsp grass fed gelatin
White Layer
- 13.5 oz light coconut milk
- 1/2 cup whipped cream flavored vodka
- 2 tbsp grass fed gelatin
Blueberry Layer
- 1 1/4 cup water
- 1 cup blueberries
- 1/4 cup vodka
- 2 1/2 tbsp grass fed gelatin
- 2 tbsp Monkfruit sweetener
- 2 tbsp lemon juice
Instructions
- Add mixed berry juice to a medium sized bowl. Sprinkle with 2 1/2 tbsp gelatin and whisk until smooth.
- Heat 1 cup cherry juice in microwave for about 1 minute until hot, but not boiling. Add to bowl with berry juice and gelatin. Whisk until smooth. Allow to cool for a few minutes, then add vodka and mix.
- Pour red layer into a 9×13-inch baking sheet (I did this while I had the baking sheet sitting on a refrigerator shelf already). Allow to set up for at least 3 hours before adding next layer.
- Add 1/2 of the coconut milk to a medium bowl and sprinkle with 2 tbsp of gelatin. Whisk until smooth.
- Heat remaining coconut milk in microwave for about 1 minute until hot, but not boiling. Add to bowl and whisk until smooth. Allow to cool for a few minutes, then add vodka and mix.
- Pour white layer on top of red layer. Allow to set up for at least 3 hours before adding next layer.
- Add 1/2 of the water and lemon juice to a medium bowl and sprinkle with 2 1/2 tbsp of gelatin. Whisk until smooth.
- Heat remaining water in microwave for about 1 minute until hot, but not boiling. Add monkfruit sweetener to hot water and stir until dissolved. Add to bowl and whisk until smooth. Allow to cool for a few minutes, then add vodka and mix.
- Pour clear layer over white layer. Add blueberries and spread them evenly. Allow gelatin to set up overnight before cutting into pieces.

For my macro trackers out there, I wasn’t able to create a My Fitness Pal barcode for this recipe since I would have had to decide for you whether to put the alcohol calories in as carbs or fats – that’s up to you! The calorie count is correct, but the 4 carbs listed here are just for the juice, sugar, and blueberries, and the 1 gram of fat is for the coconut milk. Essentially, the alcohol calories are accounted for, but they don’t show up in the carb or fat counts. For my non-macro trackers, here’s more info on what I’m talking about.
