
Happy Cocktail Friday! It’s been a minute since I’ve shared a new cocktail, but this Pink Lady Cocktail is just perfect for Galentine’s/Valentine’s Day! I got the inspiration for this drink a few weeks ago at a restaurant called Proper 21 in DC. They shook their version up into a martini glass, but I liked the idea of going for more volume in a glass with ice so that you could use a straw to slurp up any strawberry chunks while avoiding sucking down any rose petal garnishes on top.
What I love about this drink is that it’s crisp and floral, but with a nice level of sweetness from the strawberries and simple syrup to balance things out. And when you’re celebrating with your besties on Galentine’s Day, that’s exactly the energy you need! Plus…rosé all day? Hi, yes, I’m in. Cheers!
Ingredients and Substitutions
Here’s what you’ll need to recreate this Pink Lady Cocktail:
- Brut rosé cava – Really you want something sparkling, pink, and not too sweet – rosé sparkling wine, Prosecco, or champagne will work too!
- Vodka – I wanted to use a primary spirit that didn’t get in the way of the St. Germain or strawberry flavors. Gin would work really well here too if you’re a fan.
- Elderflower liqueur – St. Germain is the most recognizable brand here. It’s very floral so you only need a tiny bit in this cocktail. You can skip it if you prefer, but I think this is what sets apart this Galentine’s Day sip!
- Simple syrup – Depending on what kind of sparkling wine you use, you may need to adjust the amount of simple syrup up or down. As written, this recipe leans dry.
- Strawberry – You could totally use a bit of strawberry jam in here instead of a muddle strawberry if you want to make it easier!

Pink Lady Cocktail
Ingredients
- 3 fl oz brut rosé cava
- 1 1/2 fl oz vodka
- 1/2 fl oz simple syrup
- 1/4 fl oz St. Germain elderflower liqueur
- 1 large strawberry, chopped
Instructions
- Add chopped strawberry and simple syrup to a shaker and muddle the chopped strawberry lightly. Add vodka and St. Germain, then add 3-4 ice cubes and shake vigorously for about 10 seconds.
- Pour entire contents of shaker into a serving glass (including ice), then top with champagne. Garnish with rose petals and serve.
