We made it to another Friday! Let’s celebrate with these gorgeous Empress 75s, shall we? This colorful twist on a classic French 75 gets the gorgeous pink hue from Empress Gin. It’s infused with butterfly pea flowers, so that deep indigo you see in the bottle turns pink when it comes in contact with something acidic like lemon juice. Which is exactly what happened here, and it’s beautiful!

I’ve loved French 75s for years, and although I usually order mine with cognac instead of gin, there is just something so refreshing about a gin based French 75. Perfect for spring and early summer! And brunch anytime, obviously. If you’re having brunch with your mom on Mother’s Day, maybe bust out the bubbly to really celebrate, and make her some of these beauts!

Ingredients
  

  • 4 oz champagne
  • 2 oz Empress 75 gin
  • 1 1/2 oz lemon juice
  • 1 oz simple syrup

Instructions
 

  • Add gin, lemon juice, and simple syrup to a shaker with ice.  Shake for 5-10 seconds until shaker is frosted.  Strain liquid into 2 champagne flutes and top with champagne.
  • Garnish with a lemon twist, if desired.
