Alright friends, we’ve made it to another Friday! It may be a pandemic Friday, but…Friday nonetheless. And that calls for Blueberry Mojitos! I love a classic mojito, but sometimes you just want to change things up and play with flavors. The tart sweetness of the blueberries plays perfectly with the lime and mint. Plus, the color? Helllooooo, gorgeous!

Blueberry Mojito
Ingredients
- 4 oz soda water
- 3 oz white rum
- 2 oz simple syrup
- 1/4 cup fresh or frozen blueberries, (36 grams)
- 1/2 lime, quartered or wedged
- 8-12 mint leaves
Instructions
- If using frozen blueberries, add them to a microwave safe bowl and microwave for 30-45 seconds until blueberries are thawed. Divide blueberries between 2 pint-size highball glasses.
- Add lime wedges, simple syrup, and mint leaves to glasses and muddle lightly until lime wedges are juiced and mint leaves are fragrant.
- Add rum to the muddled mixture, then fill glass with ice, top with soda water and stir before serving. If desired, garnish with additional lime wedges and fresh mint.
