Ahhh Sunday…the day of lingering breakfasts/brunch, unhurried workouts, doggie play dates, and football (for at least a few weeks longer). If you have some extra ripe bananas laying around like me, do yourself a favor and whip up a batch of these Banana Chocolate Chip Protein Waffles. I was channeling my inner “chunky monkey” with these waffles, which is why you’ll see the peanuts and whipped cream on top. Thanks, Ben & Jerry for the inspo – these flavors go perfectly together 😉
Oh, in case you were wondering – yes, these waffles are just as drool-worthy as they look in the pictures. Go make some. Seriously.
Banana Chocolate Chip Protein Waffles
Banana Chocolate Chip Protein Waffles
Ingredients
- 1/2 cup white whole wheat flour, (60 grams)
- 1 1/2 scoops vanilla whey, (48 grams)
- 1/4 cup mini semi-sweet chocolate chips, (56 grams)
- 1/4 tsp baking powder
- 1/4 tsp cinnamon
- Pinch salt
- 1/2 cup unsweetened vanilla almond milk, (4 oz)
- 1/2 cup mashed banana, (112 grams)
- 3 egg whites
- 1 egg
- 1 tbsp unsalted butter, softened, (1/2 oz)
- 1/2 tsp vanilla extract
Instructions
- Pre-heat waffle iron to medium heat (I set mine to just below 4).
- Mix all dry ingredients, then add wet ingredients and stir until just combined.
- Spray waffle iron with non-stick cooking spray. Pour 1/3 of waffle batter into waffle iron, flip waffle maker to other side and repeat. Cook for about 4 minutes or until waffle is cooked through (my waffle maker beeps when it's done). Repeat with final waffle.
- Serve waffles with whipped cream, maple syrup, sliced bananas, crushed peanuts, and more chocolate chips on top, if desired (additional toppings not included in nutrition info).
