Higher Protein Fried Pickle Dip

- 3/4 cup fat free cottage cheese (170 grams)
- 3/4 cup light sour cream (180 grams)
- 3/4 cup whipped cream cheese (132 grams)
- 1 1/2 cups dill pickles, finely chopped (233 grams)
- 1 packet Hidden Valley Original Ranch Salad Dressing & Seasoning Mix (1 oz)
- 1/3 cup seasoned panko breadcrumbs (20 grams)
- 1 tbsp unsalted butter (14 grams)
- 1 1/2 tbsp fresh dill, chopped
- 1/2 tsp onion powder
- 1/4 tsp black pepper
Heat a skillet over medium heat, then add butter and melt. Once butter is melted and bubbly, add breadcrumbs, stirring to evenly coat in butter. Toast the breadcrumbs over medium heat, stirring frequently, until golden brown. Set aside.
Add cottage cheese to a food processor and puree until smooth. Add cream cheese, ranch seasoning, onion powder, and black pepper and process again until well combined. Finally, add sour cream and dill and process again until well combined.
Add dip to a bowl and mix in the chopped pickles. Top with toasted breadcrumbs and more fresh dill before serving.
