4inchpiece of English cucumber, roughly chopped(150 grams)

Instructions
Add cucumber, mint leaves, lime juice, simple syrup, and 1 oz of sparkling water to a food processor or blender and blend until smooth. Strain into a bowl.
Add ice cubes to 2 highball glasses and set aside.
Divide strained cucumber mixture and gin to the 2 glasses over ice, then top with sparkling water and stir. Garnish with cucumber, lime, and mint before stirring, if desired.
