Ingredients
  • 1/2 cup pure cane sugar (100 grams)
  • 1/2 cup water (4 oz)
  • 1 cup halved kumquats (5 oz)
  • 1 2" chunk peeled cucumber (55 grams)
Instructions
  1. Add water, sugar, and halved kumquats to a small pan.  Bring to a boil over medium heat and continue to boil for 5 minutes.  Remove from heat and cover for 10 minutes.

  2. Add cooled simple syrup and kumquats to a food processor with peeled cucumber.  Pulse for 30 seconds to 1 minute.  Strain before serving.
