Add all ingredients except cookies to a high speed blender. Blend until completely smooth, then fold in cookies with a spatula.
Divide into two glasses for serving. Top with whipped cream and additional chopped cookies, if desired.

Substitutions: If you don't have casein protein powder or don't want to use it, sub it out with 1 1/2 tbsp vanilla pudding mix instead. Whey protein powder will not provide the same consistency as casein.
