Banana Chocolate Chip Protein Waffles

Ingredients

  • 1/2 cup white whole wheat flour (60 grams)
  • 1 1/2 scoops vanilla whey (48 grams)
  • 1/4 cup mini semi-sweet chocolate chips (56 grams)
  • 1/4 tsp baking powder
  • 1/4 tsp cinnamon
  • Pinch salt
  • 1/2 cup unsweetened vanilla almond milk (4 oz)
  • 1/2 cup mashed banana (112 grams)
  • 3 egg whites
  • 1 egg
  • 1 tbsp unsalted butter, softened (1/2 oz)
  • 1/2 tsp vanilla extract

Instructions

  • Pre-heat waffle iron to medium heat (I set mine to just below 4).
  • Mix all dry ingredients, then add wet ingredients and stir until just combined.
  • Spray waffle iron with non-stick cooking spray.  Pour 1/3 of waffle batter into waffle iron, flip waffle maker to other side and repeat.  Cook for about 4 minutes or until waffle is cooked through (my waffle maker beeps when it's done).  Repeat with final waffle.
  • Serve waffles with whipped cream, maple syrup, sliced bananas, crushed peanuts, and more chocolate chips on top, if desired (additional toppings not included in nutrition info).
