Red, White, and Blueberry Jello Shots

Ingredients

Red Layer

White Layer

  • 13.5 oz light coconut milk
  • 1/2 cup whipped cream flavored vodka
  • 2 tbsp grass fed gelatin

Blueberry Layer

Instructions

  • Add mixed berry juice to a medium sized bowl.  Sprinkle with 2 1/2 tbsp gelatin and whisk until smooth.
  • Heat 1 cup cherry juice in microwave for about 1 minute until hot, but not boiling.  Add to bowl with berry juice and gelatin.  Whisk until smooth.  Allow to cool for a few minutes, then add vodka and mix.
  • Pour red layer into a 9x13-inch baking sheet (I did this while I had the baking sheet sitting on a refrigerator shelf already).  Allow to set up for at least 3 hours before adding next layer.
  • Add 1/2 of the coconut milk to a medium bowl and sprinkle with 2 tbsp of gelatin.  Whisk until smooth.
  • Heat remaining coconut milk in microwave for about 1 minute until hot, but not boiling. Add to bowl and whisk until smooth. Allow to cool for a few minutes, then add vodka and mix.
  • Pour white layer on top of red layer.  Allow to set up for at least 3 hours before adding next layer.
  • Add 1/2 of the water and lemon juice to a medium bowl and sprinkle with 2 1/2 tbsp of gelatin. Whisk until smooth.
  • Heat remaining water in microwave for about 1 minute until hot, but not boiling. Add monkfruit sweetener to hot water and stir until dissolved. Add to bowl and whisk until smooth. Allow to cool for a few minutes, then add vodka and mix.
  • Pour clear layer over white layer.  Add blueberries and spread them evenly.  Allow gelatin to set up overnight before cutting into pieces.

Notes

You don't have to use 2 kinds of juice in the red layer, but I liked the color and flavor better with a combo rather than just using one juice or the other.
