German Chocolate Mug Cake

- 2 tbsp quick oats
- 1 tbsp unsweetened cocoa powder
- 1/4 tsp baking powder
- 1 packet Truvia
- 1/4 tsp vanilla extract
- 2 tbsp + 1 tsp unsweetened applesauce
- 1 egg white
Frosting:
- 2 tbsp light vanilla yogurt (I used Activia)
- 2 tbsp sweetened coconut flakes
- 1 tbsp pecans finely chopped or ground
- 1 packet Truvia
- 1/4 tsp caramel extract
In a small bowl, combine all frosting ingredients. Set aside.
In another bowl, combine all mug cake ingredients.
Spray the inside of a large mug with non-stick cooking spray. Pour cake mixture into the mug and microwave on high for 2 minutes and 15 seconds.
Remove the cake from the mug and allow to cool for about a minute. Cut the cake into two layers and frost between layers and on top. Serve immediately.
