Add mixed berry juice to a medium sized bowl. Sprinkle with 2 1/2 tbsp gelatin and whisk until smooth.
Heat 1 cup cherry juice in microwave for about 1 minute until hot, but not boiling. Add to bowl with berry juice and gelatin. Whisk until smooth. Allow to cool for a few minutes, then add vodka and mix.
Pour red layer into a 9x13-inch baking sheet (I did this while I had the baking sheet sitting on a refrigerator shelf already). Allow to set up for at least 3 hours before adding next layer.
Add 1/2 of the coconut milk to a medium bowl and sprinkle with 2 tbsp of gelatin. Whisk until smooth.
Heat remaining coconut milk in microwave for about 1 minute until hot, but not boiling. Add to bowl and whisk until smooth. Allow to cool for a few minutes, then add vodka and mix.
Pour white layer on top of red layer. Allow to set up for at least 3 hours before adding next layer.
Add 1/2 of the water and lemon juice to a medium bowl and sprinkle with 2 1/2 tbsp of gelatin. Whisk until smooth.
Heat remaining water in microwave for about 1 minute until hot, but not boiling. Add monkfruit sweetener to hot water and stir until dissolved. Add to bowl and whisk until smooth. Allow to cool for a few minutes, then add vodka and mix.
Pour clear layer over white layer. Add blueberries and spread them evenly. Allow gelatin to set up overnight before cutting into pieces.
Notes
You don't have to use 2 kinds of juice in the red layer, but I liked the color and flavor better with a combo rather than just using one juice or the other.
